Rasgulla Kaise Banta Hai Hindi Mein
Rasgulla ek prasiddh dessert hai, jo Odisha ke mashhoor hai. Yeh ek soft aur spongy ball-shaped dessert hai, jo chenna (cottage cheese) se banaya jata hai aur sugar syrup me bhigoya jata hai. Rasgulla sabhi umra ke logon ko pasand hai aur aamtaur par tyoharon, shaadiyon aur anya khaas avsar par parosa jata hai. Is lekh me, hum aapko ghar par rasgulla banane ka tarika batayenge.
Rasgulla Banane ki Samagri:
Chenna ke liye:
1 liter full-fat doodh
1-2 tbsp nimbu ka ras ya sirka
Sugar syrup ke liye:
1.5 cups cheeni
4 cups paani
2-3 elaichi ke dane (vikalpik)
Rasgulla Banane ki vidhi:-
Sabse pehle chenna banane se shuru karen. Ek bhari bottom wale bartan me doodh daale aur medium aanch par garam hone de.
Kabhi kabhi hilate rahe taki doodh jal na jaye.
Jab doodh ubalne lage to aanch ko band kar de aur usme 1-2 tbsp nimbu ka ras ya sirka daale. Acchi tarah se milaye aur kuch minute ke liye chod de. Nimbu ka ras ya sirka doodh ko alag alag kar dega aur chenna aur whey (doodh ka paani) ko alag kar dega.
Ek chhalni ko ek muslin cloth ya cheesecloth se lapet kar ek bowl ke upar rakh de. Isme se chenna ka mishran daale aur whey bahar nikal de. Hathon se halka sa dabav dekar chenna me se koi bhi adhik paani nikal le.
Chenna me nimbu ka ras ya sirka ke swad ko hatane ke liye use thande paani se dho le. Cloth ke dono kone ko band karke use 30 minute ke liye latkane ke liye rakh de.
30 minute ke baad, cloth se chenna nikal le aur 5-7 minute tak use ghiskar isko smooth aur lump-free bana le.
Chenna ka mishran chhote chhote goliyo me bante jaye aur usko smooth balls me shape de. Goliyo ke upar koi crack na ho.
Ek bade bartan me cheeni, paani aur elaichi ke dane daal kar medium aanch par garam hone de. Cheeni poori tarah ghulane tak kabhi kabhi hilate rahe.
Chenna ke balls ko sugar syrup me daal de aur bartan ko ek dhakkan se dhak kar medium aanch par 15-20 minute ke liye pakane de. Jab chenna balls paka rahe ho to unhe hilana na chahe.
20 minute baad, aanch ko band kar de aur rasgullas ko sugar syrup me 30 minute ke liye thanda hone de.
Ab aapke delicious rasgullas taiyar hai. Ise thanda ya kamre ki tapman par serve kare.
Rasgulla Banane ki time Savdhani:
Chenna banane ke liye perfect texture ke liye full-fat doodh ka use kare.
Chenna balls ko overcook na kare kyonki wo hard ho jayenge aur unka spongy texture kharab ho jayega.
Sugar syrup me gulab jal ke kuch bunde daal kar rasgullas ko ek acchi sugandh dene ke liye istemal kar sakte hai.
Agar sugar syrup bahut patla hai to ise kuch minute ke liye aur pakane se thoda mota ho jayega.
Rasgullas ko upar se chopped nuts jaise pistachios ya badam se sprinkle karke aur bhi tasty bana sakte hai.
